The Story of Bruges Gold
Bruges Gold was developed not in a factory breeding programme, but originally on a Belgian family farm where flavour mattered more than speed.
The bird originates from a small, independent hatchery in Belgium, run originally by a father and daughter team. Over years of careful breeding, they set out to create a table bird with one clear aim: exceptional eating quality. Growth rate was important — but never at the expense of flavour, texture, or finish.
Now led by the daughter, Tinne, the farm continues that philosophy today. The breeding programme focuses on producing a bird that reaches a practical finishing weight while retaining the qualities of a true table chicken: firm flesh, depth of flavour, and remarkably low fat.
Bruges Gold birds are instantly recognisable. Their clean white plumage is lightly flecked with soft brown markings — a visual reminder that this is no anonymous industrial broiler, but a bird shaped by traditional selection and hands-on experience.
At around 49 days, Bruges Gold reaches approximately 2.8 kg, with the ability to grow on further if required. The result is a bird that roasts beautifully, yields excellent breast and leg meat, and delivers a depth of flavour rarely found in modern fast-growing strains.
